Mix the cinnamon sugar and lime juice in a hiball tumbler. Add the sliced apple and maul.
To a shaker, add the ginger ale, grenadine, apple juice and applejack and shake until cold.
Top the glass with ice (cubes or crushed)and pour over the mix and stir in with the sugar paste.
Top up glass with soda water. Add the bitter and serve with a slice of apple and a cinnamon stick if desired.
