Highland in the Sun Cocktail

Place lime wedges, mint and Glayva in the bottom of a glass and muddle then well. Fill the glass with crushed ice and top up with soda water.

As a graduate of International Hospitality Management from The Scottish Hotel School who's prepared quite a few cocktails in her time, this is my service tip for what should be a popular whisky based cocktail come the summer. . . always serve the lime on a cocktail stick with this beverage.
