Flaming sugar only impairs the taste, it's only done for aesthetics. The listed method is the correct way. You want to dissolve the sugar as slowly as possible using 1 droplet of water at a time.

it a great drink, but the best way to set it up is to place a sugar cube onto the spoon over a glass and pour roughly a shot of the absinthe over the spoon, then set it alight. Then use ice cold water and carefully drip the water over the melting cube into the glass.
