Cut the limes in to small pieces and place in a jug. Add the castor sugar and sprigs of mint and bash everything together with a wooden spoon. Pour over the vodka and put in the freezer until ready to serve. Top up with water to taste and serve with crushed ice, and a curl of lime rind.
